WHere is an easy interpretation of a drink found on the seasonal drinks list. Designed as a large-volume pre-mixed that's bursting with the essence associated with festive period, making it excellent for hosting a holiday party. Save the extra cordial you can use for brunch beverages, desserts, or for another batch of this cocktail.

Serves 10 guests
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine all the ingredients into a pan, heat until it reaches a light boil, agitating to dissolve. Then, take off the stove and let it to reach room temperature fully. Decant to a sterilised bottle, seal and refrigerate it in the fridge, it can be stored for about a month.
To make Batch Mix: Pour every liquid ingredients into one big jug, allow it to infuse for an hour, then pass it through best through cheesecloth, making it completely strained.
To serve: Pour 85ml of the cocktail base to a stirring glass filled with ice, and agitate gently for about 60 seconds to cool it down. Pour into an frosted cocktail glass or equivalent, decorate with some cranberries and finish by giving it a light spray of the essential oil over the drink.
